When the 3 o'clock munchies come around, get stuck into these easy to prepare delicious snacks to get you through till dinner time. You get extra points for eating more vegetables too!
Bruschetta on Sour Dough
Chop tomatoes, basil and garlic and mix together with a pinch of sea salt.
Toast sour dough bread.
Top sour dough toast with tomato mixture
Drizzle with olive oil.
Spray 12 cup muffin tray with oil.
Line muffin trays cups with sliced ham.
Sprinkle chopped spring onion, mushrooms and red capsicum into each muffin tray cup.
Whisk 6 eggs and 1/2 cup of milk and pour evenly into cups.
Top each one with shredded tasty cheese.
Cook in 180 degree celcius oven for about 5-10 min or until cooked.
Take out and allow to cool slightly before devouring them.
Gaucamole and pita bread chips
Cut Pita bread into triangular pieces using kitchen scissors.
Spray with oil and put in hot oven at 180 degrees celcius. Bake until crisp.
Chop half a tomato, half a red onion and 1/4 cup of fresh coriander
Mash avocado and mix with tomato, onion, coriander and a pinch of ground cumin.
Season with sea salt and cracked pepper.
Use pita bread chips to scoop up gaucamole and eat.
Sweet Potato Chips
Peel and cut sweet potato into batons.
Drizzle lightly with oil and cover with sea salt.
Bake in the oven at 200 degrees calcius for approx 20 minutes or until crispy, turning once half way through
